Vegetables and Haloumi Wrap

1 box Fry’s Chunky Strips
4 large, flour tortilla’s
1kg seasonal vegetables (butternut, peppers, marrows, mange tout, carrots, etc)
80g haloumi, cut into strips
100g mixed lettuce leaves or Chinese cabbage
60ml cumin
125ml oil
Salt and Pepper to taste

Cut vegetables into thin strips and toss in olive oil, thyme, salt and pepper. Grill until tender but not mushy. Grill the haloumi. Cook the Fry’s chunky strips according to the cooking instructions on the box.

Heat up a grill pan and brush it with oil. Heat up the tortilla’s until flexible and then place ¼ of the lettuce onto each, top with vegetables and the Fry’s chunky strips and then fold it up into a pocket. Serve with a fresh salad.
