Fry’s Golden Crumbed Schnitzel with Mediterranean Couscous

Ingredients
 200 g dried couscous
 2 tbsp olive oil
 1 red pepper, sliced
 1 onion, sliced
 200 g cherry tomatoes, halved
 4 garlic cloves, crushed
 10 g fresh thyme
 25 ml dry white wine
 100 ml vegetable stock
 50 g black olives, chopped
 150 g marinated artichokes, sliced
 Salt and pepper
 10 g parsley, finely chopped

Method

Preheat the oven to 180ºC/160ºC fan/ Gas 4 .

Place Fry’s Golden Crumbed Schnitzels onto a baking tray and cook on the top rack of the oven for 15-18 mins or until golden.

Meanwhile, cook the couscous according to the package instructions and set aside.

Heat a large frying pan over a medium-high heat with the olive oil. Once hot, add the peppers and onion and cook for 4-5 mins or until soft.

Add the cherry tomatoes, garlic and thyme to the pan. Cook for a further 2-3 mins then add the wine and vegetable stock. Stir to combine and cook for a further 2-3 mins.

Add the olives, artichokes and couscous to the pan. Add salt and pepper to taste.

To serve, spoon the couscous onto the plates and top with 2 cooked Fry’s Golden Crumbed Schnitzels. Garnish with the chopped parsley.
