Classic sausage, white bean and vine tomato shepherd’s pie

Yields4 Servings

 1 Pkt Fry’s Artisan Mediterranean Sausages
(6 x 50g), each cut into slices
 15ml (1 TBSP) oil
 1 onion, finely chopped
 5ml (1 tsp) crushed garlic
 1 tin white beans, drained
 1 tin cherry tomatoes
 2,5ml (½ tsp) mixed herbs
 Salt and pepper to taste
 3 cups mashed potato with chives mixed in (boil potatoes and mash with vegan mayonnaise), mashed with 75ml (5 TBSP) vegan mayonnaise

Heat the oil in a pan and fry the onion and garlic until soft.


Add the sausages and fry until lightly browned.


Add the drained beans, cherry tomatoes and mixed herbs and simmer for 3 minutes.


Season to taste.


Pour the mixture into an oven proof dish and top with the mash, spread or piped over.


Bake at 180C until the mash is light golden.
