Country Roast with Balsamic Glazed Onions

Ingredients
For the Balsamic Glazed Onions
 12 brown pickling onions
 30 ml olive or coconut oil
 30 ml balsamic vinegar
 30 ml caster sugar
 100 ml vegetable stock
 5 sprigs fresh thyme leaves

Method

Prepare the Country Roast according to the packaging instructions.

For the Balsamic Glazed Onions:

Cut the pickling onions in half lengthways and remove the skins, trimming the ends but leaving the root intact.

Heat the oil in a frying pan over a medium heat.

Add the onions and cook for 3 – 5 minutes or until golden.

Add the vinegar and the sugar and cook for a further 5 minutes.

Add stock and thyme, cover and cook for a further 5 to 7 minutes or until tender.

When the Country Roast is cooked through, add the Balsamic Glazed Onions on top and serve with a side of your favourite roasted vegetables.
