Smashed baby potato and banger salad

Ingredients
 1 packet Fry’s Wood Smoked Breakfast Bangers (6 x 50g), cut into thin slices
 15ml (1 Tbsp) oil
 700g baby potatoes, boiled and smashed with a fork
 250ml (1 cup) frozen peas, added to the warm potatoes
 30ml (2 Tbsp) chopped chives or spring onions
 10 cherry tomatoes halved
 250ml (1 cup) vegan mayonnaise
 Salt and pepper, to taste

Method

Boil the baby potatoes until soft, drain and then smash with a fork so that each potato breaks into 2 or 3 pieces.

In a pan, fry the sliced Bangers in oil until it is quite crispy.

Mix the smashed potatoes and all the other ingredients in a bowl and stir until everything is combined.

Serve warm or cold.
