Spicy corn, banger and Mexican-style rice

Ingredients
 30ml (2 Tbsp) oil
 1 onion, finely chopped
 5ml (1 tsp) crushed garlic
 1 yellow bell pepper, diced
 2 whole sweetcorn – cut the kernels off the corn
 Salt and pepper, to taste
 10ml (2 tsp) medium curry powder
 30ml (2 Tbsp) chopped parsley
 750ml (3 cups) cooked, drained rice
 45ml (3 Tbsp) chopped peppadews

Method

Heat the oil in a large pan, add the onion, garlic and peppers and fry until soft.

Add the sweetcorn and chopped Bangers and fry for 2 minutes.

Stir in the curry powder and cook for ½ a minute.

Add the remaining ingredients and heat through and serve.
